Anti-Inflammatory Sweet Potatoes

Father Frost is still holding his grip on the northern hemisphere. Especially here in Montreal. Yesterday was like -20°C… Needless to say, eating warming foods are a must. Roasted vegetables are both filling, cheap and easy to make.

In this recipe the sweet potatoes bring a healthy dose of vitamin A+C and fiber, while the turmeric boosts powerful anti-inflammatory properties. The thyme is anti viral and cinnamon (if using the true, ceylon cinnamon) is great for your sugar metabolism. This is the perfect side or main dish to stay healthy in the cold 🙂

Cinnamon Turmeric Sweet Potatoes

Serves 4 as a side, about 60 min

  • 3 medium-large (or 5 small) sweet potatoes
  • 2 tablespoons turmeric
  • 2 tablespoons cinnamon
  • 2 tablespoons thyme
  • Salt and pepper, to taste
  • 2-4 tablespoons extra virgin olive oil or coconut oil

Make it like this;

  1. Preheat oven to 400°F (205°C) on the bake or roast setting.
  2. Peel sweet potatoes and cut into bite size pieces.
  3. Place potatoes in a large bowl. Add oil to lightly cover. Add spices, herbs, salt, and pepper. Mix well. (orrrr just throw them on the baking sheet on the plate and mix them there for less dishes)
  4. Place the potatoes on a sprayed baking sheet.
  5. Cook for 45-60 minutes. Serve.
