Antioxidant Breakfast Bowl

I made this ah-mazing bowl the night before hitting a HIIT (get it?) class here in Cape Town called Sweat 1000. As you might guess from the name, it’s quite an intense workout. This antioxidant filled green bowl helped me perform at my best! (I ran fastest in class hehehehe!!)

Aside from being high in cancer-fighting antioxidants from the green tea, it’s also high in soluble fiber, as well as healthy omega-3 fats. What better way to start your day off than this?

Antioxidant Breakfast Bowl

Makes 1 serving

  • 1 dl (1/2 cup) glute-free oats
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp seeds
  • 2 handfuls of baby spinach
  • 1 dl (1/2 cup) strong green tea, cooled to room temperature
  • 1 dl (1/2 cup) unsweetened nut-milk
  • 1 handful coconut meat (or 4 tablespoons coconut cream)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 pitted date (optional and I really don’t find that it’s needed)
  • Any kind of topping: fresh berries, sliced bananas, pomegranate seeds, mango…

How to make the goodness:

  • Add all ingredients, except toppings, to a blender and mix.
  • Pour into a bowl, cover and let sit in the refrigerator overnight.
  • In the morning, add toppings and maybe a splash of milk. Enjoy!
