Eggplant Bacon-Wrapped Asparagus

Why do I not eat animals? Simple; because I love them. Once you have looked into their eyes and seen a soul, there’s really no way to continue negotiating with yourself. If you can’t kill ’em yourself, why would you pay someone else to?

Plant-based food is so tasty, it’s very rare that I feel like i’m missing out. I have been missing bacon lately tho, so you can expect some different plant based bacon here from now on 😛 first out is a eggplant one.. yes i said it, i did it, i meant it and it was very tasty indeed.

Eggplant Bacon-Wrapped Asparagus

About an hour, serves 6-8 as a side

  • 1 small eggplant (if medium/big, you’ll have to double the marinade)
  • 4-5 tablespoons olive oil
  • 2 tablespoons liquid smoke
  • 1 teaspoon brown sugar
  • 1 teaspoon salt
  • 1 bunch asparagus
  • 1 teaspoon garlic powder
  • 1 teaspoon salt, for sprinkling on top after baking

Make it:

  1. Peel your eggplant and cut it into very thin strips, about 1-inch wide.
  2. In a medium bowl, whisk together olive oil, liquid smoke, brown sugar, and salt. Add the eggplant strips to the bowl and coat in the marinade. Cover the bowl and refrigerate for an hour minimum or overnight.
  3. Once your eggplant has finished marinating, preheat your oven to 350°F (175°C).
  4. Break the ends off of the asparagus and wrap each asparagus stalk with the eggplant bacon. Use as many/few you need to cover the asparagus.
  5. Bake for 15-20 minutes. The longer you bake, the crispier your eggplant bacon will be.
  6. Serve hot and enjoy your plant based bacon 😉
