Honeydew + Matcha soup

Written by Kajsa IngelssonSeptember 21, 2016

It’s still pretty warm here in Montreal, today measured up to a stunning 26 degrees celsius! I just love how easy it is to walk everywhere in this city. All the different colored houses and street-art just makes every walk into an exploring adventure of sorts. Mr. Tiny and I were out running errands all afternoon and to be frank, we got a little sweaty. What better way to cool of then with an iced Honeydew + Matcha soup?

I have a confession to make.. I was so hot and so thirsty that I consumed my whole bowl before realizing I did not take any pictures of the soup as finished.. Ops and sorry! #lifeofmjau and show us your creations instead 🙂

♥ Honeydew + Matcha Soup

  • 1 tablespoon matcha powder
  • 4 tablespoons boiled water
  • 1/2 honeydew melon, cut into chunks (about 4 cups, 9 dl)
  • 10 oz. (200 ml) coconut water
  • 4 tablespoons shredded coconut
  • 1/2 cup (1,5 dl) loosely packed fresh mint
  • 1/2 cup (1,5 dl) loosely packed fresh basil

How to make it

  • In a small bowl, whisk the matcha powder into the water to dissolve.
  • Place all the ingredients in a blender and puree until your soup reached a smoothie consistency.
  • Pour over ice and enjoy the freshness!
