Kelp Noodles with Matcha Cream

Soaking up the last summer sun before hitting fall in full gear? Trust me, you are not the only one! This dish is perfect to celebrate the last sunshine; both light and comforting at the same time, and super healthy, of course!

♥ Kelp Noodles with Matcha Cream

Serves 1

  • 1/2 (1,5 dl) cup cashews, soaked for at least 2 h then rinsed
  • The juice from 1 meyer lemon
  • 1 tablespoon tamari
  • 3 tablespoons water
  • 1 heaped teaspoon matcha
  • 1/2 avocado
  • Cilantro, to sprinkle on top
  • 1/3 of a package kelp noodles

Make it like this:

  • Add cashews, lime juice, tamari, water and matcha to food processor and blend till easily pourable.
  • Prepare kelp noodles by rinsing in water and cutting to desired length.
  • Pour matcha sauce on top and distribute evenly
  • Add cilantro and avocado to top and serve. We had ours with marinated tempeh, steamed broccoli, sprouted beans and kimchi. Sprinkle with some pink sea salt and face that sun! 🙂
