Soaking up the last summer sun before hitting fall in full gear? Trust me, you are not the only one! This dish is perfect to celebrate the last sunshine; both light and comforting at the same time, and super healthy, of course!
♥ Kelp Noodles with Matcha Cream
Serves 1
- 1/2 (1,5 dl) cup cashews, soaked for at least 2 h then rinsed
- The juice from 1 meyer lemon
- 1 tablespoon tamari
- 3 tablespoons water
- 1 heaped teaspoon matcha
- 1/2 avocado
- Cilantro, to sprinkle on top
- 1/3 of a package kelp noodles
Make it like this:
- Add cashews, lime juice, tamari, water and matcha to food processor and blend till easily pourable.
- Prepare kelp noodles by rinsing in water and cutting to desired length.
- Pour matcha sauce on top and distribute evenly
- Add cilantro and avocado to top and serve. We had ours with marinated tempeh, steamed broccoli, sprouted beans and kimchi. Sprinkle with some pink sea salt and face that sun! 🙂
