Hi you! I know I have been a bit inconsistent here lately. Truth is, I have been having a lot to deal with in my life.. Moving is never an easy thing and when you add different continents, currencies and crazy people to that, you can rest assured that you’ll have your hands full. It’s however more or less sorted now, so I promise that i’ll be back here more often.
Let’s get back to the basics today, shall we? Oh pesto, what can you not do? It’s the perfect condiment that everyone loves. My to go version at the moment is made with pecan nuts and not as much oil as the other ones out there. Feel free to change the nuts or add more oil/salt/spice. It will last for about 5 days in the fridge, but mine never makes it past(a) day two 😛
Perfect Pecan Pesto
Serves 4, about 10 min
- 7 sprigs of parsley
- 1 handful basil
- 1,5 handfuls pecans
- 1 medium garlic clove
- The juice from half a lemon
- 4 tablespoons of olive oil (or until desired consistency)
- Salt, to taste
Make it as easy as 1 2 3:
- Using a mixer, blend until desired consistency. You probably have to scrap the sides down a couple of times.
