It’s still pretty warm here in Montreal, today measured up to a stunning 26 degrees celsius! I just love how easy it is to walk everywhere in this city. All the different colored houses and street-art just makes every walk into an exploring adventure of sorts. Mr. Tiny and I were out running errands all afternoon and to be frank, we got a little sweaty. What better way to cool of then with an iced Honeydew + Matcha soup?
I have a confession to make.. I was so hot and so thirsty that I consumed my whole bowl before realizing I did not take any pictures of the soup as finished.. Ops and sorry! #lifeofmjau and show us your creations instead 🙂
♥ Honeydew + Matcha Soup
- 1 tablespoon matcha powder
- 4 tablespoons boiled water
- 1/2 honeydew melon, cut into chunks (about 4 cups, 9 dl)
- 10 oz. (200 ml) coconut water
- 4 tablespoons shredded coconut
- 1/2 cup (1,5 dl) loosely packed fresh mint
- 1/2 cup (1,5 dl) loosely packed fresh basil
How to make it
- In a small bowl, whisk the matcha powder into the water to dissolve.
- Place all the ingredients in a blender and puree until your soup reached a smoothie consistency.
- Pour over ice and enjoy the freshness!
