This noodle salad is a healthy, colourful, delicious meal for one! So easy and fast to prepare, packed with nutrition, protein and flavour! Basically the perfect fast-food 😉
Rainbow Salad:
- 1 package konjac noodles (or other gluten-free noodles of choice)
- 4-5 radishes, thinly sliced
- 4-5 stalks asparagus, chopped
- 1/2 avocado, sliced
- 1 carrot, peeled and match-sticked
- 1 small mango, cubed
- 1/3 cup (5 tablespoons) shelled frozen edamame, thawed
- 1-2 green onions, chopped
- 3 tablespoons (like 3-4 sprigs) cilantro, chopped
- 2 tablespoons pickled red onion
Peanut Lime Dressing:
- 2 tablespoons smooth natural peanut butter
- 2 tablespoons lime juice (about 1 lime)
- 1 tablespoon tamari sauce
- 1 clove garlic, minced
- 1/2 teaspoon sesame oil
- 1/2 teaspoon fresh ginger, minced
How to make it:
- Peanut Lime Dressing:
- Add in all of the ingredients for the dressing to a small bowl and mix until well combined.
- Rainbow making:
- Cook noodles according to instructions on the packaging.
- Chop and slice everything if you have not already 🙂
- To assemble the bowl, put the noodles in the centre and arrange the veggies around the sides of the bowl. Serve the dressing on the side.
