Banana Pancakes

Hello everyone!

So I promised to share my recipe of banana pancakes. It’s super healthy, delicious, easy to make, needs 5 ingredients and you make them in a jiffy!

Did u know that the banana doesn’t count as a fruit but as a berry? They are a good source of potassium, dietary fiber, manganese and vitamins B6 & C. Bananas are known to reduce swelling, protect against developing type-2 diabetes, aid in weight loss, strengthen the nervous system and help with production of white blood cells, all due to the high level of vitamin B6 that bananas contain.

Banana Pancakes

Serves 2

  • 3 bananas
  • 6 eggs (or egg substitute)
  • Vanilla, to taste
  • Cinnamon, to taste
  • Coconut oil, for frying

Make it like this:

  • Peel the bananas and place in a bowl.
  • Start to mash with a fork. You can freestyle a bit here, either making them into a lump-free batter or keeping some chunks.
  • Whip in the eggs using the fork.
  • Add the cinnamon and vanilla.
  • Heat up some coconut oil in a pan on medium heat. I use a small frying pan, it find it to be much easier to flip the pancakes when I do so.
  • Pour some of the banana batter into the pan using a cup so you don’t accidentally pour too much into the pan (yes, guilty as charged).
  • Let it fry for a couple of minutes, shake the pan every once in awhile to see if it’s ready. It should be moving in once piece when it is (4 min mas o menos).
  • Flip it using a spatula or flipping it by tossing the pan. The later is quite hard and you get your kitchen quite messy at first 😛
  • Slice some strawberries or other fruit, serve with some coconut cream or almond butter and enjoy your morning!
