Cauliflower Tacos

This recipe is going to change your life. “How’s that” you might ask yourself a bit doubtful. Well, first it’s gonna rock your world by being: simple, cheap, super tasty, filled with nutrition, energy boosting and just the fact that it’s so colorful! It will also make you realize that you can make this 1000 different ways, so whatever’s on your mind and in your fridge, give it a go!

Last but not least, meat eaters will L O V E it. Having your sceptical family over for dinner? Make them tacos, and listen to the sound of.. well.. chewing and be ready for them praising your cooking skills after dinner (even if they do so silently 🙂

Cauliflower Tacos

Serves 4, about 30 min

For the “meat”:

  • 1 big head of cauliflower, cut into small florets
  • 5 tablespoon (or more) of taco spice (recipe coming soon)
  • 2-3 tablespoons of coconut oil

Whatever toppings you’d like, I used:

  • 1 bunch of fresh cilantro, chopped
  • 10 cocktail tomatoes, sliced in half
  • 1 bell pepper, sliced into bite sized pices
  • 1 lemon, sliced in half
  • 1 lime, sliced in half
  • 1/2 red onion, chopped
  • 1 avocado, mashed
  • 1 serving of vegan sour cream
  • Plenty of different hot sauces
  • Whatever you want to hold them in: tortillas, corn taco shells or big lettuce/cabbage leafs

How do you make it?

  • Preheat the oven to 210°c (410°F).
  • Mix the cut cauliflower with oil and your taco spice.
  • Place in the oven and roast until ready, about 15-20 min. It should be soft but not too soft, and a little bit browned.
  • Place all your topping into small bowls and serve with your kind of tortillas and the cauliflower. Squeeze some lemon or lime on top, add a little (or lot) of hot sauce and enjoy!
