Yet another dish that is: healthy, fast, cheap, easy and nutritious AF. I like to keep mine raw (rawr rawr) but please do use the slightly cooked option if you feel like something a bit less crunchy.
Cilantro and Avocado Zoodles
Serves 1, about 10 min
- 1,5 medium zucchinis
- 1 bunch cilantro, chopped
- 1,5 tablespoon apple cider vinegar
- 2 avocados
- The juice from 1/2 lemon
- 1,5 big garlic clove
- Sea salt and pepper, to taste
How to:
- Spiralize zucchini and set aside.
- Combine cilantro avocado sauce ingredients in a food processor (or blender) and pulse until it reaches a smooth consistency. Refrigerate once done.
- Here you have the option of keeping it raw or to sauté zoodles in a little oil in a pan. If so, use tongs to toss for 2-3 minutes or until slightly tender.
- Mix it all together in a bowl and serve with (of course) nutritional yeast or whatever else tickles your taste.
