A good lentil stew is priceless! It’s not only cheap to make, but also filling due to the lentils high protein content and you can super-charge it with loads of different spices and veggies to fit your current needs and mood.
Coconut Orange Lentils
Serves 2 with leftovers, about 30 min
- 2 dl (1 cup) lentils
- 2 small onions (or one medium), finely chopped
- 2 oranges
- A handful of haricot verts (or any other vegetable you’d like), chopped
- 1 can coconut milk
- 1 clove garlic, finely chopped
- 2 stalks celery, chopped
- Salt, to taste
- About 1,5 tablespoon of grated ginger
- 2 teaspoons curry powder
- Coconut oil, for frying
How to make it:
- Heat up some coconut oil in a big pot.
- Add the onion and garlic and fry for about 2-3 min on high heat. Dont forget to stirr!
- Reduce to medium heat.
- Add the celery and lentils and let it fry to get flavor.
- Add a dl or so of water and let it cook until the water is gone.
- Add the coconut milk.
- Grate a bit of ginger into the pot.
- Add 1 or 2 tablespoons of curry.
- Salt to your own taste. (I love salt)
- Let it boil for about 15 min, stirring occasionally.
- Add the juice of the two oranges and the beans or other veggies.
- Reduce the heat to medium-low and let it boil softly for another 10 min or so.
- Season after your own liking and serve with whatever you fancy.
