Avocados all the rage lately. And what’s not to like about them? They are tasty and full of good fats that keep you full for longer and they have twice as much potassium as a banana, making them an excellent post workout food!

Avocado soup
Serves 2, about 35 min with cooling
- 3 avocados
- 2 cups (5 dl) veggie stock
- 1 handful of chaya or spinach
- 3 scallions
- 1 tablespoon lemon juice
- 1/2 teaspoon herbamare salt
- 1/4 teaspoon garlic powder
- Pinch of black pepper
- 1 teaspoon sea salt
- Tahini, tomato and sprouts for garnish
How to make it:
- Place all the ingredients in a high speed blender and blend until desired consistency.
- If you want it cold a la gazpacho style, place it in the fridge for about 30 min or so.
- If not, pour into two bowls, add toppings and enjoy.
