Crispy Beet Patties

This recipe makes for the perfect pre workout meal. Quinoa brings the protein while beets bring some well needed carbs for energy, and the walnut dip tops it all off with a bunch of amino acids 🙂

We had it with roasted spaghetti squash and a mixed green salad, but feel free to pair it with whatever. Anything goes with this bad boy! 😛

Did you know that the iron in beetroots increases your body’s ability to produce blood and your levels of hemoglobin (which carries oxygen through your bloodstream)? Beets can increase oxygen uptake in your red blood cells by about 400%!! ‘Nuff said, feed me now!

♥ Crispy Beet Patties

Serves 2 with leftovers

  • 1/2 cup (1,5 dl) quinoa, rised
  • 2 small beets, chopped into cubes
  • 3 tablespoons chopped fresh parsley leaves
  • 1 onion, chopped
  • 1 big clove garlic, chopped
  • 2 tablespoons lemon juice
  • 3 tablespoon gluten free breadcrumbs
  • 1 tablespoon ground flaxseeds mixed with 3 tablespoons water (flax egg)
  • 1 tablespoon coconut oil
  • Salt and pepper to taste

♥ Walnut Miso Dressing

  • 1/2 cup (1,5 dl) walnuts, soaked for at least 2 hours then drained and rinsed
  • 1 heaped tablespoon white miso
  • 1 heaped tablespoon tahini
  • The juice from 1/2 orange
  • Water, until desired consistency

Make it:

  • Preheat the oven to either 357°F or 180°C.
  • Place the beet cubes on a lined baking tin, rub with coconut oil and roast for 30 minutes.
  • Make the flax-egg by mixing the ground flaxseeds with the water and let sit until firm.
  • Remove beets from the oven and set aside to cool.
  • Place the roasted beets in a food processor and pulse two or three times – you need some texture for the burgers, so make sure you don’t mash them completely.
  • Transfer the beets to a large bowl, add all the other ingredients and stir to combine. If the texture is too mushy add more bread crumbs until you obtain the desired consistency.
  • With slightly wet hands, shape the burgers and place them on a lined baking sheet.
  • Bake for 15 minutes on one side, then flip over and bake for 15 more minutes.
  • While your patties are baking in the oven, mix all the dressing ingredients together in a blender or bowl.
  • Place on a plate, serve with your desired sides and enjoy!
