One of the best things about summer for me is: FIGS! I just looooove them. So sweet and juicy.. Mmmm… Im drooling just thinking about it. Figs also boosts some awesome nutritional benefits; They may promote healthy digestion, decrease your risk of heart disease, and help you manage your blood sugar levels.
This salad = super healthy + tasty!
The quinoa adds in some protein making it filling, and spinach is a superfood since it contains potassium, zinc, magnesium, iron, and calcium. The green leafy vegetable is also a source of vitamins like folate, niacin, vitamin A, vitamin B6, vitamin C, vitamin K, and contains traces of the rest of the essential vitamins…..
I just love when healthy food tastes this good!
Fig and Spinach Salad
Serves 4, about 30 min
For the salad:
- 6-8 fresh figs, cut in half
- 4 cups (like three handfuls) fresh baby spinach
- 1 pear, sliced
- 1 cup (2,5 dl) cooked quinoa
- 2-3 tablespoons pumpkin seeds (raw or toasted on a sheet pan for 5 minutes at 350)
For the dressing:
- 3 teaspoons pomegranate juice
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon Dijon mustard
- 2 tablespoons olive oil
- A pinch of salt and pinch of pepper
How to make it a salad:
- Cook the quinoa according to the instructions on the packaging, or cook it as you would cook rice. That’s what I do.
- Rinse spinach and tear into pieces if it’s big. Place in a big bowl.
- Combine all ingredients for the dressing dressing and whisk until well incorporated.
- Pour over the salad.
- Add the pear and mix well.
- Finally, add the figs and pumpkin seeds and enjoy!
