Garlic Hasselback Potatoes

Im swedish and I love potatoes. It might be a bit of a cliche, but so what? They are actually good for you and not bad carbs as many want you to believe. This dish is perfect as a side to more or less anything. Or, just eat them as they are with a lil salad on the side to get your greens in. Either way, you are up for some tasty potatoes to hit your belly!

Garlic Hasselback Potatoes

Makes 1 serving, about 1 h

  • 3 medium to big potatoes
  • 3-4 tablespoons of olive oil
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons italian seasoning
  • 3-4 cloves garlic, sliced
  • Pepper to taste
  • Salt to taste

How to make ’em good:

  1. Preheat oven to 425°F (205°C).
  2. Line a baking sheet with parchment paper or do as I did and use a cast iron loaf pan.
  3. Using a paring knife, make crosswise cuts in each potato, about 1/8-inch apart, stopping before the bottom. Place on your baking dish.
  4. In a mixing bowl, combine herbs and oil.
  5. Add as much garlic as you can in the cut creases of the potatoes by using a spoon to wedge them open. Orrrr, use your fingers. It’s all good.
  6. With a spoon, pour some of the mix on top of the potatoes and do the same with the spoon to get the spices into the creases. Sprinkle salt and pepper.
  7. Place into oven and bake for approximately 35-45 minutes.
  8. Let cool a minute or two and enjoy!
