I just had the most amazing time with my mother and aunt on the countryside. Lots of lake swims, walks, laughter and of course good food! One of the dishes that I prepared was these easy marinated mushrooms. They go with a lot of things, I served them with some kimchi, fried onions, vegan cheese and baked zucchinis. It was the perfect ending to a wonderful day!
Garlic Marinated Mushrooms
Serves 4
- 10 sprigs parsley
- 5 cloves garlic
- Olive oil, around 5 tablespoons
- Pepper, freshly ground
- Salt, to taste
- The juice from 1 lemon
- 500 grams (1 pound) of whatever mushrooms you got!
How to make it all come true:
- Brush your mushrooms with a semi-soft brush if they are dirty. You should never wash mushrooms as this impacts the flavour.
- Chop or tear your mushrooms into fitting pieces.
- Place them in a big bowl and pour some olive oil on top.
- Peel the garlic cloves and either finely chop them or press them in a garlic presser. Add to the mushroom bowl.
- Tear or chop parsley into fine pieces. Also add to the bowl.
- Add the lemon juice. Be careful no seeds slink in!
- Pepper generously and mix the mushrooms to get everything coated in your spices and oil.
- Place a lid (may I suggest a plate?) on top and place in the fridge for a minimum of 5h and maximum a day or so.
- Preheat the oven to 200°C (390°F).
- Take your mushroom bowl out of the fridge and place them evenly on an oven-tray.
- Bake in the oven for around 20-30 min, depending on what consistency you’d like.
- Remove from oven, salt to your taste and enjoy with whatever you’d like 🙂
