Fast, easy and light, as I think a salad should be! Peanut butter is always a hit, and a tip is to add chickpeas for an added protein boost!
Kale Salad with Peanut Butter Dressing
Serves 2
- 1 bunch kale (or other green), de-stemmed and torn into bite sized pieces
- 4 medium carrots, cut into large chunks
- 1 small red onion, peeled and halved
- 1/2 cup (1 dl) peanut butter
- 1/2 cup (1 dl) water
- 1,5 tablespoons tamari or soy sauce
- 1/2 lime, juiced
- 2 garlic cloves or 2 teaspoon minced garlic
- 1/2 inch (1.5 cm) fresh ginger root or 1 teaspoon powdered ginger
- 1 tablespoon rice vinegar
- 3 tablespoons chopped peanuts
Make it like this:
- Place torn kale in a large bowl.
- Add carrot and onion chunks to a food processor/blender and pulse 8-10 times, or until no large chunks remain. Transfer to bowl with kale.
- Add peanut butter, water, tamari, lime juice, garlic, ginger and vinegar to food processor and blend until smooth. Pour over veggies and toss to combine.
- Enjoy topped with the chopped peanuts.
