Kale Salad with Peanut Butter Dressing

Fast, easy and light, as I think a salad should be! Peanut butter is always a hit, and a tip is to add chickpeas for an added protein boost!

Kale Salad with Peanut Butter Dressing

Serves 2

  • 1 bunch kale (or other green), de-stemmed and torn into bite sized pieces
  • 4 medium carrots, cut into large chunks
  • 1 small red onion, peeled and halved
  • 1/2 cup (1 dl) peanut butter
  • 1/2 cup (1 dl) water
  • 1,5 tablespoons tamari or soy sauce
  • 1/2 lime, juiced
  • 2 garlic cloves or 2 teaspoon minced garlic
  • 1/2 inch (1.5 cm) fresh ginger root or 1 teaspoon powdered ginger
  • 1 tablespoon rice vinegar
  • 3 tablespoons chopped peanuts

Make it like this:

  1. Place torn kale in a large bowl.
  2. Add carrot and onion chunks to a food processor/blender and pulse 8-10 times, or until no large chunks remain. Transfer to bowl with kale.
  3. Add peanut butter, water, tamari, lime juice, garlic, ginger and vinegar to food processor and blend until smooth. Pour over veggies and toss to combine.
  4. Enjoy topped with the chopped peanuts.
