Raw Kelp Noodle Pad Thai

This dish is A-M-A-Z-I-N-G! I will never have the regular pad thai again. Why would I when this tastes as good and is 10000% healthier and lighter? No more feeling like a bloated dumpsump after having thai!! PS: I know the pictures are less than pretty, but put that aside and try anyway. If you get a nicer pic than me, please let me know 😛

Raw Kelp Noodle Pad Thai

2 servings, about 10 min

  • 1 package raw kelp noodles, rinsed
  • 2 heaping tablespoons smooth and palm-oil free peanut butter
  • 3 cloves garlic, minced
  • 1/2 onion, sliced
  • 1 carrot, sliced
  • 3 tablespoons tamari
  • Juice of 1 lime (or 1 tablespoon white vinegar)
  • 1 green onion, sliced
  • 2 teaspoons baking soda
  • 1 cup (2 dl) fresh chopped coriander/cilantro
  • 5 tablespoons roughly chopped peanuts
  • A dash of sesame seeds or gomasio salt

This is how I made it:

  • Make the sauce by mixing peanut butter, tamari, garlic and lime juice. Keep mixing until a sauce forms.
  • Rinse the kelp noodles and cover them with water in a bowl. Add the baking soda and stir. Let them noodles soak for about 10 min before rinsing. This is to soften them.
  • Place the rinsed kelp noodles in a big bowl. Add the onion and carrots and mix together.
  • Add the sauce to the kelp noodles. Using two utensils, mix it as if you were tossing a salad so that everything is well coated by the sauce.
  • Taste-test for seasoning, adding something spicy if you’d like.
  • Garnish with cilantro, green onion and peanuts and let it sit for 15-20 min for the flavours to set.
  • Serve and enjoy 🌝
