Peanut Butter Blondies

I made these over the holidays and they were a big hit. I might have eaten half of them myself… But hey, they reminded me of myself; blonde, a little chewy, smooth and just perfectly sweet 😉

Peanut Butter Blondies

  • 1 cup (2,5 dl) peanut butter
  • 1 cup (2,5 dl) coconut or rice flour
  • Almost 1/3 cup (0,5 dl) brown sugar
  • Almost 1/3 cup (0,5 dl) maple syrup (more if you like your cookies super sweet, the best is to taste the batter)
  • 2 teaspoons vanilla extract
  • 1/4 cup (Almost 1 dl) nut milk
  • 1/4 cup (Almost 1 dl) coconut oil, melted

Make it come together all nice like this;

  1. Preheat oven to 350°F (175°C) and grease and line an 8×8-inch pan (or whatever else seem fitting to you, dont be too hung up on it).
  2. Combine all ingredients with a whisk. Using a rubber spatula, transfer batter to pan and spread evenly.
  3. Bake for 25-30 minutes.
  4. Remove from oven and let cool completely on a wire rack before cutting and serving.
