Mamey is a delicious fruit I recently discovered. It tastes a bit like sweet potato with a mix of cinnamon and apricot, if that makes sense? The flesh is orange, and it’s high in both vitamin C and A, making it great for skin, eyes and your immune system. Its only in season from march to the beginning of may though, so enjoy it while you can 🙂
Raw Mamey Pie
Serves 5-8 people
Filling
- 4-5 cups (12 dl) mamey
- ½ banana (optional)
- 2 tablespoons coconut oil
- 1 teaspoon cinnamon
- A pinch salt
- 1 ½ tablespoon psyllium husk or ground flaxseeds
- ½ cup (1 dl) plant-based milk
- 2 teaspoons lime juice
Crust
- 2 cups (5 dl) Walnuts
- 1 cup (2.5 dl) Dried Coconut
- 8-10 dates
- ½ teaspoon cinnamon powder
- A pinch of salt
- 1-2 tablespoons water
How to make it come together:
- Place nuts in the food processor and chop fine.
- Add all coconut and spices pulse a few times to evenly distribute.
- Add dates and process until mixture either balls up or keeps pushing up the side and not falling back into the center.
- Using hands (it helps to keep fingers moistened with water) press the mixture into an 8″ pie pan or springform pan.
- Time to make the filling! Place all the ingredients for filling in a food processor or blender and process until smooth.
- Pour into the pie crust and put in the fridge or freezer until it sets and becomes more firm.
- Garnish with chopped nuts and serve cold.
