Raw Snickers Pie

Guess who’s back, back again? Ara’s back, tell a friend! Guess who’s back guess who’s back guess who’s back nananananananana! And she brought the recipe for her famous snickers pie. Just a word of caution; it’s nearly impossible to take one bite.

A couple of words from Ara:

Cacao is one of the crops you should know where was grown and opt to buy fairtrade. There are lots of documented cases of child slavery in the plantations, as well as a far from a fair pay for the farmers. You can watch the documentary “The dark side of chocolate” for more facts about child slavery and trafficking in the cacao industry.

Raw Snickers Pie

Crust:

  • 1/4 cup (4 tablespoons) soaked almonds
  • 1/4 cup (4 tablespoons) goji berries
  • 1/4 teaspoon raw cacao powder

Filling:

  • 1 cup (2,5 dl) silken tofu
  • 3 tablespoons peanut butter
  • 2 tablespoons coconut oil
  • 2 tablespoons coconut sugar

Chocolate ganache:

  • 1/2 cup (1 dl) raw and sweetened dark chocolate paste (if you don’t find raw dark cacao paste you can easily use a mix of coconut oil, agave syrup and cacao powder)
  • 1 tablespoon coconut oil

Make the crust like this:

  1. Blend all the ingredients until it becomes a paste.
  2. Cover the pan with the paste and put it inside the fridge.

The filling like this:

  1. Place the tofu between paper towels and press it for 15min. You can use another plate to put on top to create the pressure.
  2. Blend all the ingredients until smooth.
  3. Put the filling on top of the crust.
  4. Place it in the freezer for 6 hours or in the fridge overnight.

And at last, the chocolate ganache!

  1. Melt the coconut oil in a small pot with low heat.
  2. Add the chocolate to the pot.
  3. When the chocolate is starting to melt, turn off the heat and mix it with a spoon until fully melted.
  4. Cover the pie and serve, or alternatively if you want the ganache to be hard place it back in the fridge for 10 minutes.
