Hey hey hello! It’s tuesday, aka sweets day (or is that everyday?) and I have a real treat for you today. You might remember one of my best friends, Ara from Ara Goes Green? She shared a recipe of a delicious broccoli and lentil stew last time. Well this time it’s an even better surprise: a creamy, easy, super nutritious and heavenly tasty dessert! Let me introduce you to your brand new sweetheart:
Ara’s raw superfood tiramisu
- Makes 4 portions.
- Preparation: 30min (plus soaking time for activating the nuts and seeds if you are doing that)
- Materials: I used 4 martini cups but you can use a 9 inch pan.
Mascarpone cream
- 1 cup (2,5 dl) of activated (or regular) seeds (I used sunflower seeds)
- 1/2 tablespoon ground coffee
- 5 tablespoons coconut sugar
- 1/4 teaspoon lemon juice
- 1/2 cup (1 dl) coconut milk
- 1 tablespoon maca powder (optional)
- 1/2 tablespoon lucuma powder (optional)
- 1/2 tablespoon mesquite powder (optional)
Base
- 1/2 cup (1 dl) dates
- 1 cup (2,5 dl) activated nuts (I used almonds)
- 1 teaspoon ground coffee
- 1 teaspoon melted coconut oil
- 1/2 teaspoon lemon juice
- 1 tablespoon cacao powder
Make the base like this:
- Place the nuts in a food processor or blender and grind them.
- Add the rest of the ingredients and blend until well mixed.
- Place a 1 cm layer of the mixture in your cups or pan.
- Place it in the freezer.
And now make the cream:
- Blend all the ingredients until well mixed.
- Place a layer on top of the prepared base.
- Place in the freezer for 10min.
- Keep layering until you finish the base and cream.
- Decorate with cacao powder and coffee beans.
