Ok so here’s the deal; I love myself a great salad. It’s easy and fast to make, packed with nutrition and will leave you feeling tip top in your body and soul!
Roasted Cauliflower Salad
This recipe will serve 2 persons if you have a BIG head of cauliflower and takes about 30 min to make
- 1 head of cauliflower – broken into pieces
- 3 carrots – peeled and cut lengthwise
- 1 purple onion – cut lengthwise
- 4-5 tablespoons of pitted olives
- 1 teaspoon dried oregano
- 4 tablespoons chopped parsley
- 1/3 cup tahini (or hummus)
- Juice from 1/2 a lemon
- 1-2 handful of arugula or other green
- Salt and pepper to taste
- Olive oil
Make it like this;
- Preheat oven to 375ºF
- Place cauliflower, carrots, and onion on a baking sheets. Drizzle with olive oil, salt, pepper, and oregano. Roast in the oven for 15 minutes, stir, then roast for another 15 minutes. Remove and let cool.
- Meanwhile the veggies are cooking, combine tahini, lemon juice, and salt and pepper to taste in a small bowl.
- Add salad, parsley, olives and roasted veggies to a big bowl. Toss to combine.
- Finally, drizzle the tahini dressing on top and mix well. Serve hot, room temp, or cold!
