Roasted Cauliflower Salad

Ok so here’s the deal; I love myself a great salad. It’s easy and fast to make, packed with nutrition and will leave you feeling tip top in your body and soul!

Roasted Cauliflower Salad

This recipe will serve 2 persons if you have a BIG head of cauliflower and takes about 30 min to make

  • 1 head of cauliflower – broken into pieces
  • 3 carrots – peeled and cut lengthwise
  • 1 purple onion – cut lengthwise
  • 4-5 tablespoons of pitted olives
  • 1 teaspoon dried oregano
  • 4 tablespoons chopped parsley
  • 1/3 cup tahini (or hummus)
  • Juice from 1/2 a lemon
  • 1-2 handful of arugula or other green
  • Salt and pepper to taste
  • Olive oil

Make it like this;

  1. Preheat oven to 375ºF
  2. Place cauliflower, carrots, and onion on a baking sheets. Drizzle with olive oil, salt, pepper, and oregano. Roast in the oven for 15 minutes, stir, then roast for another 15 minutes. Remove and let cool.
  3. Meanwhile the veggies are cooking, combine tahini, lemon juice, and salt and pepper to taste in a small bowl.
  4. Add salad, parsley, olives and roasted veggies to a big bowl. Toss to combine.
  5. Finally, drizzle the tahini dressing on top and mix well. Serve hot, room temp, or cold!
