What’s not to love? Peanut butter? GOOD. Sweetpotatoes? GOOD. Chickpeas? GOOD. Noodles? GOOD. Sauce? GOOD! Plus as everything else I’m making these days, it’s really inexpensive and easy to make.
Sweetpotato Noodles with Peanut Butter Sauce
Makes 2 servings, about 20 min
Sauce
- 3 tablespoons peanut butter (sans palm oil of course)
- 2 tablespoons tamari
- 2 garlic cloves
- Hot water, until desired consistency
Noodles
- 2 sweet potatoes, spiralized
- 1 tablespoon coconut oil
- 1 teaspoon salt
- 1/2 cup chickpeas, drained and washed
- 2 scallions, chopped
- A couple of mint leaves, chopped
Make it:
- Preheat the oven to 250 degrees celsius (480 f).
- Place sweet potato noodles on an oven tray and mix them with the oil and salt. Place in the oven, mixing them every 5 minutes or so until soft and a little crispy, about 10-15 min.
- Mix all the sauce ingredient in a bowl. Set aside.
- Place the noodles, chickpeas sauce, scallions and mint in a bowl and toss as if it were a salad so everything gets coated.
