Zero Waste Apple & Pear Cream

Its apple and pear season here in Sweden! This is a very simple and delicious dish that’s loved by people of all ages. The best thing about it is that you can use all those fruits that are part rotten or bruised from falling from the tree. For too long, grocery stores have been teaching us that only beautiful produce is good enough to cook with. This is not only far from the truth, but also a major problem.

You see, if food waste was a country, it would be the third largest emitter of greenhouse gases. The water waste from throwing perfectly good food equals the amount of the annual flow of the largest river in Europe.

Things need to change, and what better way to get started then assuming a personal responsibility and start cooking with less than perfect produce? 🙂

I don’t peel my fruit since a lot of the nutrients are located just below it, making it too easy for these to get removed with the peel.

Zero Waste Apple & Pear Cream

About 3 servings, around 30 min

  • 1 stick cinnamon
  • 1 teaspoon or less of vanilla
  • 1 teaspoon ground cinnamon
  • 6-8 apples and pears, core removed and sliced into pieces

How to make it:

  • Place all your fruit in a pot and add just a touch of water to the bottom of the pot, making it so that the fruit don’t burn.
  • Add the rest of the ingredients and bring to a boil.
  • Reduce to medium heat, add a lid and stirr occasionally, mixing the fruit.
  • Depending if you want it smooth or with pieces, cook for 20-30 min.
  • You can always let it cool slightly and then run it through the blender if you desire a smooth cream.
  • Store in a glass container in the fridge for up to a week.
