Is there anything that cauliflower can’t do? Tacos, pizza, steak.. 😀 Here it replaces chicken as a bite-sized peanut butter battered munch! This dish is easy to make, using only a few ingredients and it’s also surprisingly filling. Perfect as a party snack or part of a main. I served mine with mungbean pasta + zucchini noodles and it was a big hit all around the table 🙂
Peanut Cauliflower Wings
About 20 min, serves 4 as part of a main
- 1 large cauliflower
- 2 tablespoons natural crunchy peanut butter
- 1 tablespoon solid coconut oil
- 2 tablespoon tamari or other soy sauce
- Juice of 1,5 lime (reserve the other 1/2 for serving)
- 2 teaspoons garam masala
- 1/4 bunch chives, chopped
Make it come together:
- Preheat the oven to 400°F (205°C).
- Cut the cauliflower into bite-size florets and add to a parchment coated baking tray.
- Mix all the ingredients to the sauce in a bowl and add to the cauliflower, mixing to coat well.
- Spread out the cauliflower evenly, without overlapping too much.
- Cover with foil and place in the top of the oven for 15 minutes. If you use a larger cauliflower, this stage will take longer (or you’ll have more crunchy florets).
- Remove the foil, stir, and return to the oven uncovered for 10 minutes to give the edges a nice crisp.
- To serve, squeeze on a little more lime juice, add some of the chives and season with black pepper.
