Peanut Cauliflower Wings

Is there anything that cauliflower can’t do? Tacos, pizza, steak.. 😀  Here it replaces chicken as a bite-sized peanut butter battered munch! This dish is easy to make, using only a few ingredients and it’s also surprisingly filling. Perfect as a party snack or part of a main. I served mine with mungbean pasta + zucchini noodles and it was a big hit all around the table 🙂

Peanut Cauliflower Wings

About 20 min, serves 4 as part of a main

  • 1 large cauliflower
  • 2 tablespoons natural crunchy peanut butter
  • 1 tablespoon solid coconut oil
  • 2 tablespoon tamari or other soy sauce
  • Juice of 1,5 lime (reserve the other 1/2 for serving)
  • 2 teaspoons garam masala
  • 1/4 bunch chives, chopped

Make it come together:

  1. Preheat the oven to 400°F (205°C).
  2. Cut the cauliflower into bite-size florets and add to a parchment coated baking tray.
  3. Mix all the ingredients to the sauce in a bowl and add to the cauliflower, mixing to coat well.
  4. Spread out the cauliflower evenly, without overlapping too much.
  5. Cover with foil and place in the top of the oven for 15 minutes. If you use a larger cauliflower, this stage will take longer (or you’ll have more crunchy florets).
  6. Remove the foil, stir, and return to the oven uncovered for 10 minutes to give the edges a nice crisp.
  7. To serve, squeeze on a little more lime juice, add some of the chives and season with black pepper.
